I recently visited Dugeori Ushintang Neunggok branch.
I ordered their signature dish, Ushintang. The broth was spicy and peppery, and it really made me feel warmed up and relieved. It was packed with gosari, mushrooms, jujubes, and plenty of meat, so it was fun picking out each ingredient. The meat, in particular, was from the rib cut and was simmered until very tender, so it fell apart along the grain with just a gentle pull of my chopsticks, making it easy to eat.
The basic side dishes were white kimchi, salted squid, perilla leaves, and kkakdugi. All the sides were neat and delicious, and I could easily finish a bowl of rice with just these.
For reference, the standard rice is served as hot sotbap, but if you'd prefer a regular bowl of rice instead of sotbap, you can request the change and they'll provide a bowl of rice, so keep that in mind when you visit!
