I recently visited Insaeng Gamjatang Siheung Neunggok and tried the Ugeoji Gamjatang (boneless) in mild spice. First, the broth was refreshing yet gently spicy, so I thought it would be perfect as a hangover cure. In particular, the well-cooked ugeoji was served generously, offering both a nice chew and excellent savory flavor.

The meat was deboned, making it very easy to eat, and the texture was tender and satisfying. However, perhaps because it was boneless, the amount of meat felt a bit less than I expected, which was slightly disappointing. Still, the fact that you can adjust the spiciness in three levels was a big plus.

This place has a variety of menu options besides ugeoji, such as aged kimchi or scallion kimchi gamjatang, and you can choose between boneless and bone-in depending on your preference, so I'll likely visit again to try a different combination. Overall, it was a satisfying meal.
